Each disc makes one pizza with 6 to 8 slices
- 1 large watermelon
- 2⁄3 cup (160g) Greek-style yoghurt or coconut yoghurt
- 1½ cups (210g) assorted fresh fruit, cut into small pieces
Step by step
Using a sharp knife, cut a slice of watermelon from the middle so you have a round disc of about 2–3 centimetres thick.
Cut the disc into the desired number of portions. Spread a layer of yoghurt onto each slice of ‘pizza’.
Layer your fresh fruit on top and add as little or as many toppings as you like. Other great toppings are pomegranate seeds, toasted coconut and mint leaves.
