To make sugared rose petals
- 6 fresh organic roses, free from pesticides or sprays
- 2 egg whites
- Approx. 2 cups caster sugar
Gently but firmly twist each rose head to remove it from the stem. Gently tease each petal from the rose heads, and then discard the stem and stamens. Place petals into a colander and gently rinse under cold water. Spread petals in a single layer on trays lined with paper towel and allow to dry completely.
Place egg whites into a small bowl and whisk with a fork. Place sugar into a shallow wide bowl. Working with one petal at a time, use a clean small brush to coat both sides of petal with egg white. Sprinkle with sugar to coat the entire petal. Place onto trays lined with baking paper. Allow to dry until firm, at least 8 hours, or ideally, overnight.
To make buttercream:
- 125g unsalted butter
- 1 ½ cups icing sugar mixture, sifted
- 2 teaspoons milk
- Pink food gel colouring
Place butter into a medium mixing bowl, use an electric mixer to beat until pale, about 4 minutes. Gradually add icing sugar and beat until light and creamy. Add milk and food colouring and beat until well combined.
To make cupcakes:
- 10 paper muffin cases (½ cup)
- 125g unsalted butter, softened
- ½ cup caster sugar
- 1 teaspoon vanilla extract
- 2 eggs
- 1 cup self raising flour, sifted
- 80mL (1/3 cup) buttermilk
Preheat oven to 180°C. Line 10 (½ cup) muffin tins with paper cases. Place butter, sugar and vanilla extract into a medium mixing bowl. Use an electric mixer to beat until light and fluffy, about 3-4 minutes. Add eggs one at a time then alternately add flour and buttermilk. Mix until well combined. Spoon into lined tins.
Bake in preheated oven for 15 minutes or until cakes are just firm to touch. Remove from oven and allow to cool 5 minutes before transferring cakes to a wire rack to cool completely. Top each cake with a heaped spoonful of butter cream, spread over top of each cake. Arrange sugared rose petals in a butter cream in a flower pattern, starting at the outside edges and working in a circle pattern.
