Delicious over yogurt and fruit, drizzled over ice cream, eaten by the spoonful for a sore throat or simply stirred into your next cup of tea.
You will need:
Wash, dry and thickly slice lemons. Half fill clean jars with lemon slices. Pour in honey to cover lemon slices. (lemon slices will rise up)
Cover with a tight fitting lid and store in the refrigerator for 14 days. Each day, open the jar and use a clean spoon to push lemon slices back down into honey.
After 2 weeks strain honey, discarding lemon slices into clean jars, label and store in the refrigerator.
